Looking for a tasty and quick alternative to cooked carrots at dinner? If so, then try this Carrot Salad.
In a large bowl, combine 1 cup yogurt, 1 pound carrots, grated, 1/2 cup minced celery, 1 grated apple, 2 teaspoons chopped parsley, 2 1/2 teaspoons lemon juice, 1 tablespoon honey or sugar. Mix well.
Season to taste with salt and pepper. Add about 1/4 cup raisins and 1/4 cup chopped nuts, if desired. Chill and serve. Makes about 6 servings.
