Pepper Steak Provides the Pep to Dinner Menu

February 20, 1986

"I experimented with different things and came out with this recipe," Melanie Tulla writes. "You need not add anything except a platter of hot rice and dessert (for dinner)." PEPPER STEAK

1/4 cup oil

1/2 clove garlic, crushed

1 teaspoon ground ginger root

2 pounds flank steak, cut in very thin diagonal strips

2 green peppers, seeded and cut in julienne strips

1/4 cup chopped onion

1/4 cup soy sauce

1 teaspoon sugar

Hot steamed rice

Heat oil in wok or large deep skillet over medium-high heat. Add garlic and ginger and saute until golden. Add steak, increase heat to high and cook 5 minutes, stirring constantly. Remove meat and set aside.

Add green peppers and onion to hot skillet. Stir-fry until tender-crisp. Stir in soy sauce, sugar and salt to taste. Return meat to skillet and cook just until heated through, about 2 minutes. Serve with hot steamed rice. Makes 6 to 8 servings.
