1/2 cup vanilla wafers, crushed
3 eggs, separated
Juice and grated peel of 2 lemons
1 cup whipping cream
1/2 cup sugar
Place crushed vanilla wafers in bottom of 9-inch pie dish. Beat egg yolks until light and creamy. Beat in lemon peel. Add lemon juice to whipping cream and beat until soft peaks form.
Beat egg whites until soft peaks form. Slowly add sugar, beating until stiff but not dry. Fold egg whites into yolks, then fold in whipped cream. Turn into crust and freeze until firm, at least 3 hours. Serve frozen. Makes 6 to 8 servings.
