Easy Meal Features Mushrooms

Toss fresh mushrooms with tomatoes, green pepper, onions and seasonings, then serve over hot pasta for a light entree. Some crusty bread and a glass of chilled wine or iced tea completes the easy meal.

Spaghetti With Tomato and Mushroom Sauce is equally delicious served chilled. Prepare it the night before or early in the morning before dinner guests start to arrive.

SPAGHETTI WITH TOMATO AND MUSHROOM SAUCE

3 cups finely chopped tomatoes

1/3 cup chopped green pepper

1/4 cup chopped green onions

1/4 cup chopped parsley

2 cloves garlic, minced

1 tablespoon red wine vinegar

Salt

Hot pepper sauce

1/2 pound sliced mushrooms

3/4 pound spaghetti

Combine tomatoes, green pepper, green onions, parsley, garlic and vinegar and season to taste with salt and hot pepper sauce. Add mushrooms, tossing to mix well.

Cook spaghetti in boiling salted water until just tender. Drain. Serve with sauce. Makes 6 servings.

Note: Sauce and spaghetti may also be served chilled.
