Happiness Is a Flavorful Egg Halwa

Mrs. M. Haleem from Culver City submitted this easy dessert recipe with inteesting flavors.

EGG HALWA

6 eggs

8 ounces ricotta cheese

4 ounces almonds, ground

2 cups sugar

1/2 to 3/4 cup margarine, melted

1/2 teaspoon cardamom powder

1/4 teaspoon saffron

10 pistachios, chopped

Beat eggs well in bowl. Beat in ricotta cheese. Add almonds, sugar, margarine, cardamom powder and saffron. Mix into smooth paste.

Turn into 10x6-inch pan. Bake at 400 degrees 10 minutes. Reduce heat to 350 degrees and bake additional 30 minutes or until done. Sprinkle pistachios over mixture 10 to 15 minutes before removing from oven. Test with fork. Cool. Cut into diamond shape and serve. Makes about 8 to 12 servings.--MRS. M. HALEEM
