RASPBERRY FIG JAM
2 cups mashed peeled figs
1 cup sugar
Juice of 1/2 lemon
1/2 (3-ounce) package raspberry gelatin
Combine figs with sugar, lemon juice and gelatin in saucepan. Stir to blend. Bring to boil, then simmer about 20 minutes or until thickened like jam, stirring occasionally. Makes about 1 1/3 cups.
Note: A mixture of figs and crushed pineapple to equal 2 cups can be used if desired.
