Calypso Salad is a luscious blend of textures and colors. Mellow bananas, naturally sweet and creamy, are arranged with juicy sliced oranges, ripe melon, red grapes and shrimp or chunks of chicken to create a gorgeous salad that calls out for a special dressing.
The answer is a thick blend of mayonnaise combined with one ripe, pureed banana and the exotic flavor of chutney.
1 cantaloupe, peeled and sliced into 4 rings
Crisp lettuce leaves
1 pound cooked shrimp or cooked chicken chunks
2 firm bananas, peeled and sliced
1 orange, peeled and sliced
1 pound red grapes, cut into clusters
Arrange each cantaloupe ring on lettuce-lined salad plate. Fill centers with shrimp. Surround with banana and orange slices and grape clusters. Serve with Banana-Chutney Dressing. Makes 4 servings.
1 ripe banana
1 cup mayonnaise
1/4 cup chutney
2 tablespoons lemon juice
Puree banana in blender. Add mayonnaise, chutney and lemon juice. Process until blended.
