What's Fare Is Fare

February 07, 1988

Marylouise Oates reports (Jan 20) that the appetizers served at the Israeli Bonds' Gala were in "keeping with the Israeli Theme." While this surely is true, mention should also be made that foods like humus, pita bread and tabouleh are Arabic and have been part of the staple diet of Palestinians. For that matter, these foods have been part of the Arabs' diet from Egypt to Iraq for centuries. That the Israelis adopted these fine foods is a tribute to the Arabs.
