Lemonade That's Naturally Sweetened

It's summertime and once again lemonade stands have started appearing on street corners and neighborhood lawns throughout the country. Children selling lemonade on hot summer days is as all-American as Mom's apple pie, and can be a whole lot healthier.

I have a delicious, sugar-free lemonade recipe for the young entrepreneurs of the family. This year, instead of selling sugar-sweetened water with lemon juice in it, the local lemonade stand can provide customers with a really nutritious beverage--and the American Dental Assn. will applaud your efforts.

If there is any lemonade left over at the end of the day, pour it into ice-cube trays for refreshing frozen treats the whole family will enjoy. Try this healthy version of the all-time favorite summer refresher.

SUGAR-FREE LEMONADE

1/2 cup very hot water

1/4 teaspoon grated lemon peel

3/4 cup frozen apple juice concentrate, undiluted

3/4 cup lemon juice

3 cups cold water

Combine hot water and grated lemon peel and allow to cool. Add apple juice concentrate and mix well. Add lemon juice and cold water and again mix well.

Refrigerate until ready to serve. Before serving, strain to remove lemon peel, if desired. Makes 5 cups.

Variation: If sparkling drink is desired, use sparkling instead of regular water.

Cholesterol: 0 mg.

Fat: 0 gm.

Sodium: 180 mg.
