December 22, 1988

For a change of pace try these tasty Buttermilk Biscuits for breakfast, lunch or dinner.

BUTTERMILK BISCUITS

2 cups sifted flour

2 teaspoons sugar

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon soda

2/3 to 3/4 cup buttermilk

5 tablespoons butter or margarine, melted

Sift flour, sugar, baking powder, salt and soda into mixing bowl. Make well in center of dry ingredients and pour in buttermilk and butter. Stir gently with fork just until dry ingredients are moistened and dough clings together lightly in bowl.

Turn dough onto lightly floured board and knead gently, about 10 strokes. Roll out or pat to 1/2-inch thickness. Using 2-inch floured biscuit cutter, cut into biscuits. Place on ungreased baking sheet and bake at 450 degrees 10 to 12 minutes. Makes 14 biscuits.
