November 30, 1989

Ground turkey meat gives chili a new and unique taste in this Turkey Chili recipe. The flavor is at its aromatic best when prepared a day in advance and simmered about an hour before serving.

In skillet in 2 tablespoons oil saute 2 pounds ground turkey, or 1 pound ground turkey and 1 pound ground beef, with 1/2 cup chopped onion until brown. Stir in 2 cloves garlic, minced, 2 tablespoons chili powder (or to taste), 2 teaspoons ground cumin, 1 tablespoon paprika, 1 (28-ounce) can tomatoes and 1 teaspoon salt. Season to taste with black pepper. Cover, bring to boil over high heat, then reduce heat and simmer for at least 1 hour.

Add 1 (15-ounce) can red kidney beans and 1 (15-ounce) can pinto beans and heat through. Cool and refrigerate overnight, if desired. Reheat 1 hour before serving. Makes 8 servings.
