I happen to be Italian. I know what polenta is. My grandmother made it for us six children at least once a week. But how many people now know what polenta is? Your author didn't give a clue about making polenta. Where is the recipe for polenta? That is made first--then it can be used in many ways.
Please inform the gourmet cooks who haven't the foggiest.
