Her associate, Diane Diehl, teaches a four-hour "Petit Protocol" class quarterly in the Biltmore's Presidential Suite. In this grand setting, she demonstrates the finer points of party and dining conduct--how to make introductions, when to use which fork and so on--then takes her students, ages 7 through 12, to the Los Angeles hotel's restaurant to practice.
