Pudding Cake, Macaroni and Cheese

DEAR SOS: I used to have a recipe for chocolate pudding cake with the cake portion at the top and the pudding at the bottom. I lost my recipe. Can you help?

DEAR DORA: This homey cake was the rage during the '30s, '40s and early '50s.

CHOCOLATE PUDDING CAKE

1/2 cup shortening

1 cup sugar

2 squares unsweetened chocolate, melted

2 eggs

1 1/2 cups sifted flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1/2 teaspoon vanilla extract

Cream shortening and sugar in bowl until light and fluffy. Add melted chocolate and eggs. Beat well. Sift together flour, baking soda soda and salt in separate bowl.

Add flour mixture alternately with buttermilk to chocolate mixture, beating well after each addition. Add vanilla extract. Pour into greased 8-inch-square cake pan. Cover loosely with foil. Bake at 350 degrees 1 hour.

Makes 6 to 8 servings.

Each serving contains:

475 calories; 164 mg sodium; 72 mg cholesterol; 25 grams fat; 60 grams carbohydrates; 7 grams protein; 0.32 gram fiber.

DEAR GLADYS: We happen to like former President Ronald Reagan's favorite macaroni and cheese recipe. Although very simple, it is one of our most frequently requested recipes.

PRESIDENT REAGAN'S MACARONI AND CHEESE

1/2 pound macaroni

1 teaspoon butter

1 egg, beaten

1 teaspoon dry mustard

1 teaspoon salt

1 cup warm milk

1 tablespoon hot water

Shredded sharp American cheese

Cook macaroni in pot of water until tender. Drain.

Mix butter, egg, mustard, salt, milk and hot water. Combine macaroni and butter mixture in bowl. Add 3 cups shredded cheese. Combine. Pour into buttered casserole. Sprinkle with additional shredded cheese. Bake at 350 degrees 45 minutes, or until custard is set and top is crusty.

Makes 4 to 6 servings.

Each serving contains:

612 calories; 1,172 mg sodium; 149 mg cholesterol; 32 grams fat; 47 grams carbohydrates; 32 grams protein; 0.22 gram fiber.
