Tortillas require a fine masa , tamales a coarser grind. That's why Azteca Milling Co. now produces two kinds of instant masa , both under the Maseca label. Ground from Texas white corn, the new tamale masa comes complete with recipes, one for traditional tamales and one for tamale pie. Look for it in Latino markets.
