Pavilions markets have carried frozen ground buffalo meat for about two years. Now (using the slogan "Have You Herd?") they're adding frozen buffalo steak, sold in packs of two 8- to 10-ounce ribeyes. The meat comes from Star B Ranch in Ramona, Calif.
Buffalo tastes almost exactly like beef, though perhaps a little sweeter. The big attraction--that is, apart from the thrill of the whole idea of eating buffalo--is that the meat isn't marbled with fat, so it contains 25% to 30% fewer calories than beef.
