To roast and peel a pepper, either broil or grill it, turning frequently, until all sides darken and wrinkle. Place the pepper in a plastic bag and let it steam for a few minutes. Then simply remove the peel with your fingers. Peppers can also be stuck on a fork and roasted over the flame of an open burner.
