The Foul Side of the Chicken Industry

May 22, 1997

Your article "In Fowl Territory" (May 6) that described the growing popularity of chicken as a food choice failed to mention the dark side of the poultry industry.

Producing chicken causes widespread pollution of waterways and ground water. To produce 1 pound of chicken takes 6 pounds of feed and eight times as much fossil fuel as is needed to produce the same amount of protein from tofu.
