*To cook cactus and remove the sticky sap, boil it in water with sea salt and a pinch of baking soda to prevent it from losing its dark green color. Once the cactus is cooked, drain and rinse with cool water.

*Cactus may also be cooked in a skillet or saucepan at high heat to remove the sap. Constantly move the cactus around in the pan with a spatula to prevent it from burning.
