Esther Peterson, 91, a consumer advocate who held positions in the Kennedy, Johnson and Carter administrations. She was the primary impetus behind the labeling of foods with nutritional values, and had a role in providing better pricing information by pricing through units. She also worked as an educator, a labor organizer and an advocate of women's rights. On Saturday of unstated causes at her home in Washington, D.C.
