For long cooking, you want even heat. To that end, these durable, handsomely designed Finnish saucepans are constructed of several layers of stainless steel and aluminum. The Times Test Kitchen staff especially liked the graduated volume indicator on the inside wall of the pans, very handy when you're reducing sauces and making stocks.
