DEAR SOS: How about a recipe for the famous flannel cakes at Musso & Frank Grill on Hollywood Boulevard?

DEAR VIRGINIA: A quantity recipe broken down to a home-size amount often results in compositional changes that alter the texture and taste of the product. This is as close as we could come to the original in attempting to break down the 50-cake recipe the chefs at Musso & Frank graciously offered.

Musso & Frank Flannel Cakes

Active Work and Total Preparation Time: 20 Minutes

6 eggs

2 cups milk

1 tablespoon oil

Salt

1/2 cup all-purpose flour

1/2 cup pastry flour

1/4 teaspoon vanilla extract

2 tablespoons sugar

* Beat eggs, milk, oil and pinch of salt in bowl. Add all-purpose flour and pastry flour and mix well. Add vanilla and sugar and mix well.

* Pour 1/3 cup batter per cake onto greased skillet and cook over medium heat until golden brown, 3 to 4 minutes. Turn and cook until golden brown on other side, 2 to 3 minutes.

10 to 12 cakes. Each of 12 cakes: 109 calories; 72 mg sodium; 109 mg cholesterol; 5 grams fat; 12 grams carbohydrates; 5 grams protein; 0.02 gram fiber.
