'Light' Chicken Burritos

My children's sports practices always seem to be scheduled during our dinner hour. When we get home, I have three hungry boys who want to eat now! A local market makes some reasonably good roasted chicken, and it's sold warm. (Our family refers to it as "light-bulb chicken" because of the heat lamps in the warming case.) I cut it up into bite-size pieces and open a can of refried beans. Some chopped, fresh cilantro, a can of corn heated in the microwave, a couple of diced ripe tomatoes and flour tortillas complete the meal. Everyone makes their own "light-bulb chicken burritos."
