Zap Your Salmon

I love salmon. But I want a quick method of preparation after I come home from work. So a friend devised this easy recipe, "Fish Bowl," for me.

For 2 servings, place 1/2 pound of fresh salmon rather snugly in a microwave-safe dish. Over the fish, squeeze the juice of 1/2 a lemon and add 5 tablespoons soy sauce and 5 tablespoons water. Cover the dish with plastic wrap and microwave on high about 3 1/2 minutes. Time the cooking so the fish is slightly undercooked--a little darker in the middle than on the top. Set fish aside while you microwave about 1/2 cup of frozen stir-fry vegetables according to package directions. Add the cooked fish, the sauce and the vegetables to a bowl of leftover heated rice. Eat it, then try to wait patiently until the next evening when you can prepare another Fish Bowl.
