Chocolate Tofu Shake, Call It Frappe

February 21, 2001|DONNA DEANE | TIMES TEST KITCHEN DIRECTOR

You can blend tofu into drinks, giving them a creamy texture almost like a milkshake, but if you're not careful, you wind up with a chalky aftertaste. The way around this is to make sure the drink has strong enough basic flavors that you won't notice. In this frappe, the addition of instant espresso and cocoa adds a good dominant flavor while vanilla and almond extracts round the whole thing out.
