Hold the Chicken

Chinese chicken with orange sauce is terrific even without the chicken, as in Kung Pao Bistro's adaptation of this dish for vegetarians. A soy product with the texture of chicken is cut into bite-size pieces and combined with the spicy, sweet orange sauce. Steamed white or brown rice and a fortune cookie come with the order.
