Cooking classes at restaurants and specialty schools can be fun, but then you get home, realize you don’t have half the equipment you just used and can’t re-create the dishes. It’s like the salon effect: You can never do your hair quite as well yourself. “Culinary coach” Gregg Denter, a veteran of several celebrated hotel restaurants, solves this problem by offering classes in home kitchens using only the client’s utensils and appliances.
