The sense of malaise settling over much of the restaurant industry seems to have missed a spot: the still-growing fast-casual segment that includes chains such as Chipotle Mexican Grill and Panera Bread. A new report from researchers at the NPD Group found that the number of upscale quick-service eateries - known for higher service levels, better-quality food and larger check sizes than their fast food cousins - grew 7% in the year ended in May. Foot traffic into such establishments rose 9% as customer visits to the restaurant industry as a whole stagnated.

A day after announcing plans to raise prices in 2014, Chipotle Mexican Grill watched its stock surge in intra-day trading to an all-time high. The stock reached $511.10 a share on Friday before closing up 16%, or $70.67, at $509.74. Investors were cheered by the fast-casual chain's decision to charge more for food next year. Executives said an increase in the "mid-single digit range," landing in the middle of the year, "is a reasonable assumption. " It's "likely that the entire menu will be touched," said Chief Financial Officer John Hartung in a conference call with analysts Thursday.

For the first time in 20 years, the Mexican fast casual chain Chipotle is adding a new protein to the menu, and it's tofu. Surprised? Food and restaurant analysts are already placing their bets for next year's top restaurant trends, including automatons in the kitchen, mini dishes, pricier drinks and something called “bar snackification.” Step one, though, is going casual. Categories including pizza, fish, Greek and Asian are all going the Panera route, delivering faster service than high-end restaurants but better ingredients and a more premium vibe than fast-food. Customizable sushi joints , easy Indian wraps and other options allow Americans to sample ethnic foods and new takes on once-boring standbys with minimal fuss and intimidation.

Chipotle Mexican Grill Inc. is entering its 20s with another strong earnings report, a commitment to ditch genetically modified ingredients and an expanding Asian food concept. In its second quarter, which ended June 30, the fast-casual chain and stock market darling saw same-store sales increase 5.5%. The figures, announced after the market closed Thursday, helped push Chipotle stock up 7.7%, or $29.14, to $405.89 a share midday Friday in New York. The Denver company's stock is up nearly 27% so far in 2013.
