If you're using a different variety, start with one teaspoon and work your way up. Chipotle fans - and there are many - are in a near panic over a recent report from the company which seems to suggest that climate change could cause guacamole to disappear from the chain's menu. The reality may be much less dramatic. The hullaballoo started earlier this week when the Thinkprogress.org blog drew attention to Chipotle's annual report, filed last month with the Securities and Exchange Commission. In a section of the report covering “risks related to operating in the restaurant industry,” the Mexican-style chain mentioned that “changes in food and supply costs could adversely affect our results of operations.” Factors for such changes include “general economic conditions, seasonal fluctuations, weather conditions, global demand, food safety concerns, generalized infectious diseases, fluctuations of the U.S. dollar, product recalls and government regulations,” according to Chipotle.  The company went on to describe how prices for many ingredients “escalated markedly” during 2013 and will likely continue to rise during 2014, especially for avocados and meat.

For the first time in 20 years, the Mexican fast casual chain Chipotle is adding a new protein to the menu, and it's tofu. Surprised? The tofu dish is called "sofritas," and it hits Southern California Chipotle menus June 3. All it took for Chipotle Mexican Grill Inc.'s stock to tumble 7% in less than five minutes was a recommendation to short from hedge fund manager David Einhorn. The plunge was deep and immediate. The Greenlight Capital founder's concerns about the fast-casual chain's surging growth, price increases, problems with possible illegal immigrants and ability to shake off renewed competition from Taco Bell set off a mad sell-off Tuesday. Speaking at the Value Investing Congress in New York, Einhorn said Chipotle has ridden high in recent years, according to news reports . The company has been on a tear since late 2008, going from less than $40 a share to well over $400.

Chipotle Mexican Grill Inc. is entering its 20s with another strong earnings report, a commitment to ditch genetically modified ingredients and an expanding Asian food concept. In its second quarter, which ended June 30, the fast-casual chain and stock market darling saw same-store sales increase 5.5%. The figures, announced after the market closed Thursday, helped push Chipotle stock up 7.7%, or $29.14, to $405.89 a share midday Friday in New York. The Denver company's stock is up nearly 27% so far in 2013.

Food and restaurant analysts are already placing their bets for next year's top restaurant trends, including automatons in the kitchen, mini dishes, pricier drinks and something called “bar snackification.” Step one, though, is going casual. Categories including pizza, fish, Greek and Asian are all going the Panera route, delivering faster service than high-end restaurants but better ingredients and a more premium vibe than fast-food. We tasted three new gluten-free chips that make a pretty basket together, as well as versatile dippers: beet with goat cheese, chipotle with guacamole and lentil with a hot salsa. Two of them come from the L.A. company the Better Chip - in beet and chipotle flavors. The company makes its chips with no more than five ingredients. For the beet, that's corn, chopped beets, oil and sea salt. They have 140 calories per serving, which is about 10 chips. The chipotle chips contain corn, smoked jalapeno peppers, oil and salt.

A day after announcing plans to raise prices in 2014, Chipotle Mexican Grill watched its stock surge in intra-day trading to an all-time high. The stock reached $511.10 a share on Friday before closing up 16%, or $70.67, at $509.74. Investors were cheered by the fast-casual chain's decision to charge more for food next year. Executives said an increase in the "mid-single digit range," landing in the middle of the year, "is a reasonable assumption. " It's "likely that the entire menu will be touched," said Chief Financial Officer John Hartung in a conference call with analysts Thursday.

The sense of malaise settling over much of the restaurant industry seems to have missed a spot: the still-growing fast-casual segment that includes chains such as Chipotle Mexican Grill and Panera Bread. A new report from researchers at the NPD Group found that the number of upscale quick-service eateries - known for higher service levels, better-quality food and larger check sizes than their fast food cousins - grew 7% in the year ended in May. Foot traffic into such establishments rose 9% as customer visits to the restaurant industry as a whole stagnated.

In an initial public offering apparently blessed by the Flying Spaghetti Monster or some other deity inclined toward stringy foods, Noodles & Co. stock is soaring in its debut. The fast-casual restaurant chain opened up 78% at $32 a share Friday after pricing a day earlier at $18 a share. By midday in New York, the stock price had more than doubled to $37.69 a share. If the Broomfield, Colo., company can keep up the momentum, it may close the day as the best-performing debut to date this year.

DENVER - Much of GOP nominee Mitt Romney's Tuesday was dominated by debate prep, but he took a break for lunch this afternoon and stopped by Chipotle. "I usually get the burrito. I think I'll go for the bowl today. That's a good idea," Romney said as he entered the restaurant. In a city that could be considered the melting pot of the world, it's only fitting that our pick for a St. Patrick's Day cocktail is Mexican. Created by mixologist Gilbert Marquez for Santa Monica's nouveau Mexican restaurant Mercado, the drink is called the Irish Poet. The spicy libation is fueled by the smoky flavor of mezcal, the heat of seeded poblano peppers, the zing of fresh lime juice and a lick of chipotle pepper-infused salt. Inspiration for the drink struck Marquez after a riotous tequila-drinking session with a loquacious Irishman in Mexico.
