How do Hawaiians get in the Christmas spirit? With a festive parade, a gift fair, a gingerbread creation and a colorful tree. In December, at least 17 Oahu communities will celebrate with parades, and visitors are welcome to join in. Saturday will mark the return of the West Oahu Holiday Electric Light Parade to Kapolei, about 25 miles northwest of Waikiki. The procession, which will include 40 units -- two marching bands will take part too -- begins at 6 p.m. at the Kapolei Fairgrounds and travels to the Kapolei Hale (city hall)

Turbinado sugar can be found at cooking and baking supply stores, as well as select well-stocked and specialty markets. This is a treat by itself, and a wonderful dessert served with a mound of whipped cream, a scoop of vanilla ice cream or a little sweetened Greek yogurt and pear or applesauce. 1 cup turbinado sugar 3/4 cup canola oil 1 cup dark molasses 2 teaspoons baking soda 1 cup boiling water 2 3/4 cups (11.7 ounces)

Dear SOS: We recently had a fabulous dinner at Vitaly Paley's new restaurant, Imperial, in Portland, Ore. Everything was truly amazing. The crowning touch was a gingerbread sticky pudding with cold whipped cream. Is there any way the restaurant would part with the recipe? I would love to make this for our family. When the weather turns cool, I get a hankering for gingerbread. Like a goose heading south, I'm drawn irresistibly to the supermarket, where I purchase the only jar of Grandma's molasses that I will buy all year long. I bring it home to the inevitable chorus of "Oh, no! It's gingerbread time!" Don't ask me why my children dislike gingerbread. It's as mysterious as my seasonal longing for it, as predictable as what follows next. Soon after the procurement of molasses, I bake a pan of gingerbread.

We at Heritage Square were delighted to see that our Hale House was such a delicious inspiration for your article "Glaze of Glory" (by Leilah Bernstein, Dec. 9). Of course, the problem is that within a short time, there will be nothing left of the gingerbread house but crumbs. But it's possible to visit the real Hale House all year long--a particularly sweet experience without the calories.   Total time: 1 1/2 hours, plus chilling time (up to 1 week) for the dough Servings: 3 1/2 dozen Note: From Amy Scattergood. 3 cups flour 1/2 teaspoon sea salt 1 tablespoon baking soda 3/4 cup (1 1/2 sticks) butter 1 cup brown sugar 1/2 cup molasses (not blackstrap) 1 egg 1 tablespoon finely grated fresh ginger 1 tablespoon ground ginger 1/2 teaspoon ground allspice 1 1/2 teaspoons ground cinnamon 1/2 teaspoon ground black pepper 1/2 teaspoon ground cloves 1/4 teaspoon ground cardamom 1. In a large bowl, mix the flour, salt and baking soda.

This year's gingerbread White House features the first lady's kitchen garden -- fitting, since the 1,500-square-foot vegetable garden on the South Lawn of the White House is the first to be planted there since Eleanor Roosevelt's victory garden.  Executive pastry chef Bill Yosses and his team spent more than six weeks making the gingerbread house, using 175 pounds of gingerbread and 50 pounds of white chocolate, reported Obama Foodorama ...

It may be a tropical paradise, but Oahu still gets into the holiday spirit with activities for adults and kids. Through Jan. 2, the Sheraton Princess Kaiulani in Waikiki is featuring a 24-foot-wide, 14-foot-tall edible winter wonderland. Executive Chef Ralf Bauer has incorporated familiar structures into his “Hawaii and the World, a Global Holiday Celebration” attraction. It began a few years ago as a diorama drawn from memories of Bauer's childhood in Germany and has expanded for 2012 to include Paris' Eiffel Tower and a Japanese pagoda.

A thought on fish as food What is the matter with some people when an article has to do with animals that provide food for humanity ["Fresh Off the Farm," by Heidi Fuller-Love, Nov. 21]? Kendra Schussel's response to "Fresh Off the Farm" is beyond belief [Letters, Nov. 28]. I realize that many people are vegetarians or vegans, but let's get real. Of course, a fish feels pain, as does every other one of God's creatures when it's killed. If Schussel has a better way to painlessly euthanize an animal without the use of a veterinarian so that us nonvegans can have a steak, fish filet or fried chicken, please let us know what it is.
