As turkey is to Thanksgiving and roast beef to Christmas, so lamb is to Easter and Passover. It's the best season of the year for an industry that's been struggling to get more racks and legs on American dinner plates. Lamb and mutton consumption in the U.S. has dropped for the last four years and is expected to be flat at best in 2012, according to the American Lamb Board. Experts blame a sluggish economy and lamb's high price relative to other meats. Racks of lamb were selling this week at a Whole Foods market in Los Angeles for a hefty $17.99 a pound.

The Kentucky Wildcats withstood a late second-half rally by the Kansas Jayhawks to capture the program's eight NCAA championship with a 67-59 victory on Monday night at the Superdome in New Orleans. Kansas, which trailed by double digits for much of the game, had a chance to cut the lead to three points when guard Elijah Johnson elevated for a three-pointer. But a Kentucky defender forced him to pull the shot down, causing him to travel with 23.5 seconds left and Kentucky leading, 65-59.

After the Oscars, dessert will be served in 3-D at the Governors Ball this year. Spago pastry chef Sherry Yard has created an Austrian chocolate cake that resembles a staircase leading to a giant edible Oscar statuette that is iced in a way that makes it pop into relief when viewed through the 3-D glasses presented with the dessert. "It's the first time we're going to eat in 3-D," says the ball's master chef, Wolfgang Puck, over coffee before lunch service at Spago in Beverly Hills.

Those at the Sports Arena can tell the grandkids that they were there the day UCLA upset Colorado … in basketball. Such is the way the go-figure Pac-12 Conference has played out thus far this season. Colorado entered the game tied for first place. UCLA wandered in seventh, trying to gain some traction. The 77-60 victory had to restore some order to the college basketball world, at least in the eyes of Bruins fans. This was again UCLA, the school of Alcindor and Walton, against Colorado, school of Meely … Cliff Meely … All-American in 1971?

Sometimes in cooking, a little extra effort pays off with big improvements. That's true of this leg of lamb from Russ Parsons. It's boned, stuffed, then tied back together before the final roasting. The result is a real showpiece for a dinner party. What's more, most of the work can be done the day before. And you can buy the lamb already boned from the butcher, which will make it much easier to prepare. Total time: 3 hours, plus resting time Servings: Serves 6 to 8 Note: The lamb can be prepared through Step 4 (stuffed and tied)

The difference between Tyler Lamb's play in UCLA's last three games and his play a few weeks before is, to paraphrase a Mark Twain quote, akin to the difference between lightning and the lightning bug. The sophomore guard scored a career-high 17 points in UCLA's win Tuesday over UC Irvine, and he nearly recorded a triple-double the game before against UC Davis, with nine points, nine rebounds and seven assists. And before that, against Eastern Washington, Lamb scored 14 points, the most since he had 15 on Nov. 15. If it looks like he's a different player, that's partly true.

I've always done my armchair traveling through cookbooks - whether it's Elizabeth David's Mediterranean, Fuschia Dunlop's Sichuan or Claudia Roden's Middle East. My copy of Paula Wolfert's original "Couscous & Other Good Food From Morocco"is stained and worn, with notes scribbled in the margins, marks of so many dinner parties through the years. But so much changed since Wolfert published that book in 1973. Just think in terms of ingredients available now, such as argan oil, Moroccan cumin or real saffron.

The UCLA men's basketball team's road show will start with what amounts to a home game for Tyler Lamb . The sophomore guard spent two years at Colony High in Ontario and still has friends and family near Citizens Business Bank Arena, where the Bruins will play an exhibition game against Cal State San Bernardino at 2 p.m. on Sunday. "It will be a good chance for everybody to finally get to watch me play again," Lamb said. "They haven't watched me play since high school. " They didn't miss much during Lamb's first year in Westwood.

At David Padilla and Maria Ramos' Oaxacan restaurant Gish Bac, the weekends are made for goat and lamb barbecue. A third-generation barbacoa specialist, Ramos began learning the trade of goat and lamb barbecue as a 10-year-old in Oaxaca's Sunday market in Tlacolula — one of Mexico's longest-running markets — where her family still operates a stand. The couple came to Los Angeles in 1992 and immediately began catering private events. This went on until a year ago, when a growing chorus of requests from attendees at these gatherings demanded more regular access to Ramos' barbacoa . Padilla and Ramos found a restaurant location in the heart of Mid-City, and Gish Bac (roughly, "from Tlacolula")

Life at Kabab Grill revolves not, as its name suggests, around a grill for its kebabs but around an imposing stone oven. The 4-by-6-foot custom-made behemoth dominates the open kitchen at this otherwise modest 2-month-old cafe in Palms. "Last week we roasted a whole stuffed lamb in it for someone's party," owner Firas Tar, who comes from Syria, tells a customer, clearly proud of his oven's prowess. But whole roast lamb isn't on the daily menu at Kabab Grill. The oven's cardinal purpose is to bake safeeha , a thin Syrian-style flatbread loaded with savory toppings.
