Lindsay Olive Cooperative Sold: A private processor says it is buying the brand and inventory of the financially troubled Lindsay Olive Growers cooperative in Lindsay, Calif. Tim Carter, chief executive of Bell-Carter Foods, said the deal will make his Lafayette-based company the biggest olive processor in California. Lindsay Olives has been the largest single employer in the Tulare County city of 9,000. Sixty-five maintenance workers were let go immediately.

This was to be the season Lindsay snapped back from the 1990 freeze that ravaged crops. The oranges and olives bloomed abundantly. The packinghouses and canneries hummed again. Then this Central Valley town's third-largest employer, General Cable, shut down. And on Sept. 18, the eve of the olive harvest, Lindsay was hit with the worst news of all. Lindsay Olive, founded in 1916 and once the world's largest olive processor--the company in this company town--had pulled the plug for good.

Question: Lindsay olives used to have a product, green ripe olives, available in most supermarkets. I haven't seen them for the past two to three years. Are they still available and, if so, where might I find them? They were the greatest. Answer: We contacted the Lindsay Olive Growers and were assured that they still produce green ripe olives. Here in Southern California they are available in selected Albertson's Inc., Ralphs Grocery Co. and Stater Bros. Markets Inc.

Until recently, olives appeared on most American tables only at Thanksgiving and Christmas, nestled amid the celery and radishes. Or in martinis. The true olive eaters in America were people of Mediterranean ancestry, who relied on small mom and pop grocery stores for weekly or monthly supplies of imported olives, scooped out of crocks of salty brine. The American taste was strictly for "ripe" black olives--pit-free by preference, so the kids could wear them on their fingertips.

The world's largest olives grow in turn-of-the-century orchards bordering Northern California farm towns such as Oroville, Palermo and Richvale. An estimated 8,000 acres of Sevillano trees yield a variety that is marketed--in agricultural hyperbole--as "jumbo," "colossal" and even " super colossal."
