Flexibility will be the hallmark of two new restaurants scheduled to open later this year. The Edgemar Grill in Santa Monica will, as a matter of basic philosophy, go out of its way to satisfy customers' special wants and needs. "We're going to really try to accommodate people's special diets and whims," says Peter DeLucca--former chef at the Darwin (now defunct) in Santa Monica and a 72 Market Street alumn--who will head the Edgemar Grill kitchen. "We'll offer a good choice of low-calorie, low-fat dishes on the menu--but beyond that, if somebody wants this or doesn't want that, we'll do our best to give them what they want."

THE old Le Chine Wok space on Beverly Boulevard, where red paper Chinese lanterns used to bob in the breeze, now shows off clean Modernist lines with a dark wood facade. The sign reads "Hatfield's" in big, bold letters. It's the new restaurant from Quinn and Karen Hatfield, who have moved from San Francisco back to Karen's hometown. The two chefs met when they worked together at Spago a decade ago.

SEVEN restaurants in seven cities in five days. It's a tall order, to be sure, checking out the most dynamic young chefs in southwest France, crisscrossing the region by car, covering more than 1,000 miles and consuming more than 37 courses -- and that's not counting extra treats like amuse-bouche and mignardises -- just to see what's cooking. French cuisine is in a funk, as chefs lose ground to the Spanish and the Brits.

Everybody wants to strike it rich in the restaurant business by coming up with a concept that replicates like rabbits. Entrepreneurs daydream about the killing that the founders of California Pizza Kitchen made when they sold a portion of the chain. Coming up with a theme, ah, there's the rub. Many of the good ones are taken: rock music (Hard Rock Cafe), sports (Official All Star Cafe), movies (Planet Hollywood), tropical jungle (Rainforest Cafe), even hard time (Alcatraz Brewing Co.).

This is Beverly Hills?, I wondered, oh so many years ago when a friend took me to lunch in a sweet little house with a fireplace on South Beverly Drive. Chez Mimi later moved to Santa Monica, and Urth Caffé now dispenses soy lattes and iced green tea from that rose-covered cottage. Back then (and now), South Beverly Drive didn't seem fancy at all, more like a small-town Main Street where you'd find shops selling nightgowns and one-piece swimming suits, baseball cards and birthday gifts.

The Scene: The "toast" hosted Wednesday at Sunset Boulevard's Bar One club by the Academy of Science Fiction, Fantasy and Horror Films for Trimark's "Leprechaun." This is the ultra low-budget horror film that was on the straight-to-video expressway until it did extremely well with test audiences. It is now getting a theatrical opening--and a pot of gold's worth of hype to go with it. "Toast" Translated: It was a premiere party sans screening. Why?

"Ratatouille" swept the 35th annual Annie Awards Friday, winning 10 awards including best animated feature, plus directing and writing honors for Brad Bird. The Pixar/Disney release about a French rat who dreams of becoming a master chef in Paris has already won the Golden Globe for best animated feature and is considered the front-runner for the Oscar in the animated feature category. The animation awards were announced by the International Animated Film Society and were scheduled to be handed out Friday night in a ceremony at UCLA's Royce Hall, hosted by Tom Kenny, best known as the voice of SpongeBob SquarePants.

In the television, motion picture and pop music mecca of the world, quiet, salon-style evenings are almost unheard of. Spoken Interludes, a monthly gathering for supper and stories at Le Colonial restaurant in L.A., is an exception. Louisiana-born writer-actress DeLaune Michel conceived Spoken Interludes in 1996, when she was waiting in line at the post office. "I was thinking back on a series of great holiday parties I had just given.
